Summer Peach & Corn Bowl
Summer has been crazy for me between traveling and visiting friends I haven’t seen since before COVID. It has been hard to set aside the time for cooking. However, this is one of my favorite dishes of summer. I was inspired by this amazingly fresh corn I found. It is quick, fresh, light, and so so SO flavorful. This would also make you a hit with friends and family if you bring it to a party.
Tips:
Try to use fresh everything. A good life tip to remember is the fewer ingredients you are using, the fresher you want your ingredients. It really will make a difference.
Do not overcook your corn. If you are cooking your corn on the stove in boiling water, don’t let it sit on the stove for hours on end. It should take about 10 minutes, give or take. Honestly, even if it is a little undercooked, it is fine. You really want that crunch.
Salad Ingredients:
1/4 Cup Farro, Cooked
1/4 Cup Fresh Corn, Cooked and Off the Cob
1/8 Red Onion, Thinly Sliced
1/2 Fresh Peach, Sliced
1/2 Cup Spring Mix
2 Tablespoons Feta, Crumbled (or more because YOLO)
3 Tablespoons Pistachios, Crumbled
3 Tablespoons Honey Lemon Vinaigrette (Ingredients Below)
Honey Lemon Vinaigrette Ingredients:
Fresh Juice from 1 Lemon (Without Seeds)
1 1/4 Tablespoon Apple Cider Vinegar
1 Teaspoon Dijon Mustard
1/2 Teaspoon Kosher Salt
1/4 Teaspoon Black Pepper
1/4 Cup Honey
3/4 Cup Olive Oil
Mix all these ingredients for 30 seconds to 1 minute to create the vinaigrette.
Serves: 1-2 People (If it is the main course)
Cook Time: Approximately 15 Minutes
Instructions:
Add farro, corn, peaches, red onion, and spring mix to w bowl.
Top with feta and pistachios.
Drizzle the lemon honey vinaigrette on top of all of the ingredients. Mix well.
Enjoy with a glass of sparkling water or rosé! Pairs well with hot weather and fresh produce!
