Pumpkin Oatmeal

Easy & Delicious Breakfast For Fall!

If you are looking for an easy breakfast to keep you warm, look no further. You can have fun and play around with this recipe. Use whatever toppings you like. Make it work for you!

Tips: Keep extra milk on the side and add it gradually. Decide how much you want based on if you like your oatmeal thin or thick.

Serves: 2-4

Cook Time: 20-30 minutes

Ingredients:

  • 2/3 Cup Rolled Oats

  • 2 1/4 Almond Milk (or whatever milk you like)

  • 1/2 Honeycrisp Apple, Sliced

  • 1/3 Cup Pumpkin Puree

  • 1 Tspn Maple Syrup

  • 3/4 Tspn Brown Sugar

  • 3/4 Tspn Salt

  • 1/2 Tspn Flaxseed/Chia Seeds

  • 1/2 Tspn Pepitas

  • 1/2 Tspn Cinnamon

  • 1/2 Tspn Pumpkin Pie Spice

  • 1/4 Tspn Nutmeg

  • 1/4 Tspn Allspice

Instructions:

  1. Heat the almond milk in a pot on medium high heat for approximately 5 minutes.

  2. Add the seasonings, pumpkin, and oats. Whisk well together for 10-15 minutes until the oats have softened.

3. Once the oatmeal is thickened to your liking, serve it in a bowl and top it with the apples, pepitas, maple syrup, and flax/chia seeds.
