Roasted Gnocchi
Who doesn't love gnocchi!? This recipe was inspired by a friend and it is so vibrant and delicious. You can always feel free to play around with the flavors to suit what you like. I love this flavor combination. It is savory, buttery, and most of all, EASY.
Cook Time: 40-45 mins
Serves: 3-4
Ingredients:
- 1 12 oz Bag Rana Skillet Gnocchi
- 7-9 oz Butternut Squash, Cubed
- 1/4 Red Onion, Sliced
- 3/4 lb Brussel Sprouts, Halved
- 3/4 Cup Kale, Chopped
- 2 Tablespoons Unsalted Butter
- 5-6 Fresh Sage Leaves
- 3 Teaspoons Garlic Powder
- 2 Teaspoons Onion Powder
- 2-3 Teaspoons Salt
- 1 Teaspoon Black Pepper
- Non-Stick Spray
Optional:
- 3 Teaspoons Parmigiano Reggiano, Shredded
Instructions:
1. Preheat the oven to 400 degrees.
2. Line a pan with tin foil and spray the non-stick spray to make sure it is completely covered.
3. Add the brussel sprouts, gnocchi, red onion, butternut squash, and seasonings. Toss everything well.
4. Place in the oven and cook for 20 minutes. Take out of the oven, add the kale, then toss with a little more nonstick spray.
5. Roast for another 10 minutes.
6. Right before the gnocchi is ready to be taken out of the oven and served, melt the butter in a pan and cook on medium high until it browns.
7. Pour the butter on the entire pan and toss well.
8. Sprinkle everything with the parm cheese because cheese always.
9. Dig in! This pairs nicely with a cider and a stressful day.
